Healthy Berry Muffins

I recently made these delicious healthy muffins and I just had to share the recipe. 

Well, I say healthy. Each muffin contains around 80-90 calories which is much less then you average chocolate bar, and are full of flavour. So if you have a sweet-tooth like me, you have to try these! 


To make about 10 of these gorgeous muffins you will need:


175g Self-Raising Flour


1 teaspoon of Ground Cinnamon


140g of Brown Sugar


75ml of Apple Sauce


75ml of Almond Milk (or whatever milk you prefer)


1 free range egg


1 teaspoon of Pure Vanilla Essence


Whatever fruit you want. I used Red Currents, Raspberries and Blueberries.


1.  Firstly pre-heat your oven to 200C and line a muffin tin with cases. In a large bowl sift all the dry ingredients together (Flour, cinnamon and sugar) and mix until well combined.


2. In a separate bowl mix all your wet ingredients together (Apple sauce, milk, egg and vanilla) until well combined.


3. Add your dry mixture carefully to the wet and mix until just combined. Next fold in your chosen fruits. (If you want the fruit to stay near the top of the muffins sprinkle them onto the muffins after they have been in the oven for a couple of minutes).


4. Spoon the mixture into the cases filling them 2/3 of the way full. (Optional: Sprinkle your muffins with porridge oats or coconut) Bake in the centre of the oven for 12-15 minutes until golden.
